    The chef

    Thomas Keller is an American chef and restaurateur best known for The French Laundry in Yountville and Per Se in New York, the first pair of restaurants under one American-born chef to hold three Michelin stars simultaneously.

    He learned in American kitchens and in France, opened and lost a restaurant in New York early in his career, and bought a former steam-laundry building in Yountville in 1994. Everything since has grown out of that room.

    How the kitchens think

    Four principles run through every restaurant in the group: portions calibrated so that pleasure never declines within a course, no ingredient repeated across a menu, sourcing built on a small number of long-term growers, and the pursuit of what Keller calls finesse — the last five percent that separates correct from right.

    The daily-changing menus are a consequence, not a marketing decision. Under a no-repetition rule with a three-acre garden dictating supply, a fixed menu would be impossible.

    Recognition

    Six Michelin stars across two restaurants, multiple James Beard Awards, and France's Legion of Honour for advancing French cuisine abroad. He also led the multi-year American effort at the Bocuse d'Or that culminated in the country's first win.

    Beyond awards, his kitchens function as teaching institutions: a substantial share of leading American chefs passed through Yountville or Columbus Circle first.
