What the tasting menus include
Two nine-course menus run in parallel every service: the Chef's Tasting Menu and the Tasting of Vegetables. Both change daily, and the kitchen holds to Keller's rule that no single ingredient repeats across a menu — a constraint that shapes how the whole progression is written.
Courses arrive in small, precisely portioned servings, a deliberate application of what Keller calls the law of diminishing returns: the first bites of a dish are the most satisfying, so the portion stops before interest does. Expect roughly three to four hours at the table.
- Chef's Tasting Menu — nine courses, seafood, meat and dessert progression
- Tasting of Vegetables — nine courses, fully vegetable-driven, not an adapted version of the main menu
- Salmon tartare cornets and Oysters and Pearls appear as long-standing signatures
- Cheese course and a sequence of desserts and mignardises close the meal
