    The menus

    Per Se serves a nine-course Chef's Tasting Menu and a nine-course Tasting of Vegetables, both changing daily and both following the no-repeated-ingredient rule. The salon — the lounge area near the entrance — offers an à la carte alternative for guests who want the kitchen's cooking without committing to the full progression.

    Signature courses cross over from Yountville: the salmon tartare cornet and Oysters and Pearls both appear, alongside dishes built around East Coast seafood and Hudson Valley produce.

    The room and the view

    The dining room faces Central Park through floor-to-ceiling windows, with the park's southwest corner directly below. Tables at the window are requested constantly; the restaurant assigns them rather than selling them.

    The salon is a genuinely different experience — lower commitment, shorter, and bookable closer to the date. For a first visit to Keller's cooking in New York on a smaller budget, it is the practical entry point.

    Booking Per Se

    Reservations open on a rolling basis roughly two months ahead through the restaurant's ticketing system, with prepayment at booking. Salon seating operates on a different, more flexible basis, including some walk-in capacity earlier in the evening.

    Because Per Se serves a large business and travel audience, cancellations appear more frequently than at The French Laundry, particularly for weeknights.
