    Booking

    Per Se releases prepaid tickets on a rolling window ahead of each date, in the same model as Yountville but with materially better odds — Manhattan generates more cancellations and more midweek availability.

    Weeknights are noticeably easier than weekends, and lunch, where offered, easier still. Set an alert and check returns in the final week.

    Cost

    The dining-room tasting menu is prepaid per person, with wine, supplements and any additions settled at the table. Two people should budget from roughly $1,300 with moderate wine.

    The salon is the low-commitment alternative: à la carte, no prepayment, and a fraction of the cost.

    The room

    Fourth floor of the Deutsche Bank Center, entered through the blue door, looking north over Columbus Circle and into Central Park. The dining room seats fewer than seventy.

    Time your booking for the light you want: daylight over the park in summer, the lit city in winter.

    The food

    Nine courses, rewritten daily, opening with the salmon cornet and Oysters and Pearls and running through a New York-sourced sequence to cheese and two desserts.

    The vegetable tasting menu is a full composition rather than a substitution, and the cheese programme is among the strongest in the city.

    Practicalities

    Jacket required for gentlemen. Arrive within five minutes. Allow three to four hours. Declare dietary requirements 48 hours ahead. Coats are taken at the door.

    The restaurant is lift-accessible throughout, which makes it the more practical of the two flagships for guests with mobility needs.

    Per Se or The French Laundry?

    Same philosophy, different produce and different rooms. Yountville has the garden, the history and the harder table; Per Se has the view, the salon and the easier booking.

    For most travellers, Per Se is the more achievable way to eat this cooking at its highest level, and nobody should treat it as a substitute.
