    The composition

    Pearl tapioca is cooked and folded into a warm sabayon, poached oysters are set into it, and a quenelle of caviar finishes the plate. Everything on it is round, soft and saline.

    The tapioca is not a garnish or a novelty. It matches the size and slipperiness of the caviar beads, so the two read as a single texture rather than as a luxury ingredient sitting on top of a base.

    Why it endures

    The kitchen otherwise refuses to repeat itself; menus change daily and ingredients do not recur within a meal. That a single dish has survived this discipline for decades tells you how completely it works.

    It also functions structurally: rich enough to signal ambition early in the meal, but light and saline enough that the courses after it still land.

    Ordering it

    It appears on the Chef's Tasting Menu at both three-star restaurants, sometimes as a supplement with a larger caviar service. The vegetable menu carries a different opening.
