Early years and France
Keller began in restaurant kitchens in Florida, where his mother managed a restaurant, and worked his way through American kitchens before staging in France. That period established the classical grounding — sauce work, discipline, repetition — that the group's kitchens still run on.
His first restaurant as chef-owner in New York closed. He has spoken about that closure repeatedly as the formative event of his career, and it is why he speaks about restaurants as businesses as often as he speaks about food.
