    Before Yountville

    The early period covers American club and hotel kitchens, French stages, and the New York restaurant Rakel, which opened in the late 1980s and closed after the market turned.

    By the early 1990s Keller was looking for a room of his own outside New York, with the specific intention of building a restaurant where the cooking dictated the economics rather than the reverse.

    The 1990s

    1994: purchase of The French Laundry building in Yountville after an extended fundraising round. The restaurant opens the same year with a small brigade and a menu that changes daily from the start.

    By the end of the decade the restaurant is a national destination, and the first cookbook is in preparation.

    The 2000s

    2003: Bouchon Bakery and the wider bistro concept extend the group in Yountville and Las Vegas. 2004: Per Se opens in New York, and Restaurant magazine's world ranking places The French Laundry at the top in consecutive years.

    The first MICHELIN guides covering New York and California follow, awarding three stars to both flagships and establishing the six-star position Keller still holds.

    • 2003 and 2004 — The French Laundry ranked world's best
    • 2004 — Per Se opens at the Time Warner Center
    • 2006 — Ad Hoc opens in Yountville as a temporary project

    The 2010s

    The decade is defined by consolidation rather than expansion: a full renovation of the Yountville kitchen, the Bocuse d'Or programme reaching gold, and continued publication including the bakery volume.

    Ad Hoc, opened as a stopgap, becomes permanent — the clearest signal that the group's future was about depth in one village rather than a national rollout.

    The 2020s

    The pandemic period forces the tasting-menu restaurants into temporary formats and accelerates the shift toward fully prepaid ticketing, which is now the standard booking model at both flagships.

    The Surf Club Restaurant in Florida extends the group south, and both flagship restaurants retain their three stars through successive guides.

    What the timeline tells you

    Three decades, six restaurants. The restraint is the story: at any point after 2004 the brand could have supported rapid expansion, and it did not happen.
