    The dish and the format

    Brined in buttermilk, dredged, fried to a deep crust and served in platters for the table, alongside whatever salad, side and dessert the kitchen has written that day.

    It is not an à la carte item and cannot be ordered on a non-chicken night. The whole room eats the same menu.
