    Dining with Allergies and Dietary Restrictions

    Tasting-menu kitchens accommodate a great deal, but only with notice. A menu written and prepped that morning cannot be rewritten at 7:45pm.

    When and how to tell them

    Enter restrictions at the time of booking, then confirm by email or phone at least 48 hours before the date. Name the guest each restriction belongs to — a table of four with one allergy is much easier to plate correctly than a table with an unattributed note.

    Distinguish clearly between a medical allergy and a preference. Kitchens handle both, but they handle them with different protocols.

    What is realistic

    Shellfish, nuts, gluten, dairy and pork are routinely worked around. Vegan menus are possible with sufficient notice. Extremely restrictive combinations may be met with an honest conversation about whether the experience will still be worthwhile.

    Note that a vegetarian tasting menu is not automatically gluten-free or dairy-free; it is built freely on butter, cheese and eggs.
